Sweetly cinnamon bread
/My husband does not like sweets. To clarify, he likes a little bit of sweet but nothing rich or chocolately. He'll take something with a little bit of vanilla or cinnamon, or a fruity crumble. But anything overboard in the sweet department is too rich for his liking.
Yes. Strange. I know.
So when it comes to dessert I'm always on the hunt for things that have a hint of sweetness. And if they go well with his after dinner cup of tea (used to be coffee but we've both given up for tea) even better.
This recipe for a "snickerdoodle bread" has been floating around pinterest for awhile. After reading the dramatic responses to the recipe, I knew I had to try it for myself. It sounded like it was definitely something Dan would love. And that's what I'm here for, right?
I've tweaked the recipe a bit. For starters it calls for the addition of cinnamon chips. I didn't have these in my cupboard and honestly, they sounded a little unappealing to me. But I've never tried them so I have no scientific basis. I also tweaked the method for combining ingredients too. It came out a little dry the first time, so I think altering the method helped.
But if you like a little sweet with your warm cup of tea, or nestled in the bowl next to your vanilla bean ice cream, I'm thinking you're going to love this little cakey-cake. The original recipe also calls for dividing it up among four mini-loaf pans. I'm too lazy for that. I divided among two regular size loaf pans.
Ingredients:
1 cup butter, softened
2 cups sugar (*cough* you can cut this back a bit and it won't effect the recipe.)
2 teaspoons cinnamon
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
3/4 cup sour cream
2 1/2 cups all purpose flour
1 teaspoon baking powder
Topping:
Cinnamon sugar blend. Try a ratio of one part sugar to one part cinnamon.
In the bowl of your mixer cream together butter and sugar. Add the eggs one at a time and mix until combined. In a separate bowl combine (I like to give them a little whisking with a fork) dry ingredients (flour, cinnamon, salt, baking powder). Add flour and sour cream, alternating between the two and beginning and ending with the flour. Line two loaf pans with parchment paper (or grease and flour) and divide batter between them. Sprinkle batter with topping. Bake at 350 degrees for approximately 35-38 minutes. **Check periodically for doneness!**
